Our Story

Hi, my name is Steven Paukner.  I was first introduced to the art of smoking meat in 2018. That year I purchased my first small, inexpensive charcoal smoker and attempted smoking brisket at my son’s 1st birthday party. I quickly realized that there was a lot I didn’t know about this craft. To perfect the art, I was going to have to buckle down and learn as much as I could.  I started watching different chef videos and following pitmasters around the world. I was also fortunate to take a class in Texas where I learned first-hand what makes Texas barbecue so special. Using smoke to cook has now become a beloved hobby and something that brings me great pride.

I started Wild Oak Barbecue in 2023 with the dream of bringing a unique craft barbeque experience to the Milwaukee area, using some of the best meats from local Wisconsin farms.  I am putting my heart and soul into honoring the history and tradition of Texas barbecue. I hope to give people an opportunity to taste this amazing, flavorful food along with some additional crafted entrées and sides that will be offered on the menu.
